- Boneless primals & subprimals: Chuck & Chuck Tender, Blade & Oyster Blade, Brisket, Navel, Flank, Flat, Ribeye Cap, Cube Roll, Striploin, Tenderloin, Topside (cap on), Eyeround, Knuckle, D-Rump, Tail of Rump, Shank/Shin/Heel Muscle.
- Trimmings programs: 80–95VL by spec, consistent fat/lean and particle size for further processing.
- Bone-in prepared items: Hind Shank, Prepared Ribs, Intercostals; quarter carcass bone-in on request.
- Edible offal: Heart, Liver, Kidney, Tripe, Omasum, Tail, Feet (additional items on request).
- Export bones: Neck, Back, Spare Rib, Knee, Leg, Lumbar; chuck/feather/ribeye/brisket bones by program.
