Argentina pairs intense sunlight, dry high-desert climates and cool nights to produce extra virgin olive oils with vivid green aromatics and a peppery, medium-to-high bitterness—especially from its flagship Arauco varietal. Harvest runs late January through mid-May, letting buyers in the Northern Hemisphere source newly pressed EVOO while last season’s oils age elsewhere.

We align chemistry and sensory specs up front—free acidity, peroxide and UV absorbance (K232/K270/ΔK), fruitiness/ bitterness/pungency targets, and sensory defects = none for EVOO. Programs include quick milling from harvest, cold extraction, nitrogen protection, and packaging designed to preserve phenolics through transit.
